30 Second Salmon Crust

Ingredients (Serves 2):

  • 1 cup roasted hazelnuts
  • 1tb sweet chilli sauce
  • freshly squeezed lemon juice
  • 2 fresh salmon portions
  • parsley to garnish

Directions

  1. Crush roasted nuts in a food processor or in a zip lock bag and rolling pin until it resembles a crumble (some chunks are fine and add crunch when cooked).
  2. Mix in the sauce and lemon juice.
  3. Place salmon skin side down on a baking tray and press mixture over the top.
  4. Bake in a 190C oven until salmon is cooked and crust has caramelised.
