Hazelnut Carrot Slice
This is a fantastic, easy to make slice that will be a real treatfor both children and adults.
- 1 cup self-raising flour
- 1 teaspoon ground cinnamon
- cup sugar
- cup of finely grated carrot ( about two medium carrots)
- 1/3 cup desiccated coconut
- cup chopped roasted Hazelnuts
- 2 eggs beaten
- 90g butter, melted
Frosting
- 125g cream cheese
- 1 cups icing sugar
- 30g butter, melted
- 1 tsp lemon juice (optional)
Directions
- Preheat oven to moderate 180 deg C or 170 fan forced
- Line a 23 cm square slice tin with baking paper
- In a large mixing bowl add flour, cinnamon, sugar, coconut and chopped hazelnuts mix till just combined.
- Add eggs, butter, sultanas and carrot mix till all combined.
- Spread evenly into prepared tin and smooth surface; bake for 30 minutes until golden and just firm to touch.
- When cooked remove from oven. Cool in tin, then turn out for icing.
- To make icing. Beat cream cheese till soft. Then add icing sugar, beat for 2 minutes with electric beaters or by hand till smooth soft and fluffy. Add lemon juice and beat till combined.
- Spread icing over cooled slice cut into squares to serve.
This slice can be stored for 2 days in and air tight container or in the fridge for 3 days . Can be frozen for up to 2 months in the freezer without icing.
